INGREDIENTS:
TO PREPARE:
1. Cut grapefruits in half. Remove pulp and cut in sections. Reserve grapefruit shells.
2. Cut away top and bottom from oranges and lime and then remove skin and pith. Cut in sections, reserving juices.
3. In a baking dish, mix grapefruit, orange and lime sections. Sprinkle with sherry and marinate 1 hour.
4. Put fruit in reserved grapefruit shells. Sprinkle with brown sugar and dot with butter. Broil until brown sugar melts.
5. Top with reserved juices and garnish with mint.
SERVES: 4
- 2 pink grapefruit
- 1 white grapefruit
- 3 oranges
- 1 lime
- 3 Tablespoons sherry
- 4 Tablespoons light brown sugar
- 2 Tablespoons butter
- Sprigs of lemon balm for garnish
- Mint leaves for garnish
