It’s recipe day!  I’m glad to say that this week’s dish was much less hassle than last week’s.  That’s partly because I cooked it in a crockpot.  Out of necessity, I might add, because now my stove and oven do not work.  Friends, you can check out my recipes with confidence, knowing they were tested by an incompetent cook who has no functioning kitchen appliances and no counter space in her kitchen.  (Please don’t bother to feel sorry for me, because I don’t like to cook, anyway!)

Anyway, here is a recipe for a crockpot meal that is low glycemic, low calorie, easy, and a little bit different.  I substituted low GI apples for the high GI potatoes in a familiar comfort meal.  Enjoy!

2 lb. round steak

1 packet onion soup mix

4 cups beef broth

black pepper to taste

4 carrots cut into chunks

2 apples, quartered

1 stalk of celery

Put the steak in the crockpot and add the other ingredients.  Cook until done.

If possible, set aside some of the meal for your lunch tomorrow.  Make it easy on yourself!
