These breakfast cookies are low glycemic and good for you — so you can have them for breakfast or for a snack. Just be careful not to eat too many!
- 1 cup Special K Cereal
- 1/3 cup uncooked oatmeal
- 2 tbsp. All Bran Cereal
- Natural sweetener to equal 2 Tbsp. sugar (I used three packs of Truvia)
- 2 Tbsp. powdered milk. (Didn’t have any, so I substituted with protein powder.)
- 2 Tbsp. peanut butter (I used sunflower seed butter because of a peanut sensitivity.)
- 1 tsp. vanilla extract
- 1 egg, lightly beaten.
Directions
Combine the cereals, sugar, and powdered milk. Blend together peanut butter, vanilla, and egg until smooth. Pour peanut butter mixture over the dry ingredients and stir until well blended. Drop by spoonfuls onto a waxed paper-lined dinner plate. You should have 8 to 10 cookies. Microwave at high power for 1/1/2 to 2 minutes. until set. Allow to cool.
One cookie has 58 calories, 3.2 grams of protein, and .8 gram fiber. They are high in iron (9% of your daily requirement in one cookie) riboflavin, selenium, thiamin and very high in vitamin B12.
If you are comparing these to Grandma’s oatmeal cookies, you might be a bit disappointed. Think of them instead as a granola bar cookie. They are chewy and tasty — even with all my substitutions! Remember to eat them slowly and mindfully! (See previous posts.) Enjoy!
