Today is recipe day.    Here is one of my favorites. I love to take it to potluck dinners so there is something filling and yummy I can enjoy without giving myself a setback.  Next week I’ll post my favorite dessert — which I also take to potlucks for the same reason.  I also like this with raisins instead of grapes, although raisins have a slightly higher glycemic index number.

Broccoli and Cauliflower Salad

  • 4 cups broccoli florets
  • 4 cups cauliflower florets
  • 1 cup grapes, halved
  • 1/4 cup imitation bacon bits or crisped bacon crumbles

Dressing:

  • 1 cup mayonnaise
  • 2 tablespoons vinegar
  • natural sugar substitute equal to 1 tsp. sugar

Mix dressing with vegetables – Enjoy!
