Sometimes you just need something munchy. Here is a recipe that is good for you, easy to fix, and inexpensive. How can you beat that?
Our post yesterday featured the often-overlooked, low glycemic wonder food — garbanzo beans, or chickpeas. Roasted, they make a terrific crunchy snack.
Here’s how to make them:
Crunchy Garbanzo Snacks
Drain and rinse a can of garbanzo beans. Pat dry with paper towels. Coat lightly with a teaspoon or so of virgin coconut oil (or oil of your choice — but coconut oil is good for you).
Toss with a spice of your choice. You can use sea salt, chili powder, and cumin for a Mexican flavor, or try a cajun or mediterranean spice mix. You may just want to use a teaspoon or so of sea salt.
For a sweet snack, toss with 2 T. maple syrup, honey, or agave nectar. You can add cinnamon, nutmeg, and ginger for a flavor variety.
Bake in a 400 degree F. oven for 30 minutes or so, stirring a couple of times. They should be crunchy all the way through — not soft in the middle Let them cool and then enjoy.
Do remember that, although these guys are low glycemic and provide many nutrients, they contain about 270 calories per cup, so they are not a free food. Also remember that they are beans, and too many can give you the same digestive issues as too many bowls of beans!
But they are a snack you can munch without ill effects to your blood sugar levels. And they make a great addition to homemade trail mix.
