I’ve discovered this great little take out place, not so far from where we live.  They have only one item on the menu – baked falafel sandwiches in whole wheat pita bread.  You can then help yourself to vegetable “toppings” from their little salad bar.  Only $5.  Amazing.

So I’ve been “treating” myself to that sandwich.  Piling the vegetables high is fantastic. They make them tasty by roasting some of them, with lots of spices.  They have pickled baby eggplant and beets, seasoned carrots, two different kinds of slaw, shredded lettuces, tomato salsa, sautéed onion, corn, olives, roasted broccoli and cauliflower (I avoid that one!).

The seasonings are so great on their vegetables, the sandwiches need no dressings.  If you want, though, they have some yogurt and mint sauce available.

This is a way to get a lot of vegetables in me and feel full and satisfied, inexpensively.  It’s low calorie and low fat, because everything is baked and roasted, instead of fried.

I’m going to replicate this in our kitchen, and have a lot of roasted and seasoned vegetables available in the fridge during the week for snacks and meals.
