Here’s a delicious, nutritious, low calorie, easy and inexpensive drink that fills you up and gives you a good boost of energy.  Think of it for breakfast, or any meal, or for a snack, especially a nighttime nightcap (if you struggle with nighttime eating).

My friend, Todd Lester, a frequent traveler and gourmet, taught me this recipe after visiting Brazil.  He says Brazil is all about fresh juices, and festivities.  It’s hard to beat a drink with fresh pineapple and mint, I must say.  I’m happy to share it with you.  This recipe makes a lot of juice, enough for 4 servings.  If you’re only making one for yourself, adjust proportionately.  You could also substitute canned pineapple with the kind that is in water, not heavy syrup.  The mint could be dried, or omitted entirely if you are not a mint lover.

Brazilian Pineapple Mint Smoothie (Jugo abacaxi e hortelã)

Pineapple: fresh 1 average size, cored and cubed
Mint: fresh, about 10 leaves
1 ½ to 2 cups of fat-free milk
5-10 ice cubes

Place the pineapple and mint in a blender, low speed initially, and let it get chopped up a bit.  Add milk to desired consistency, and then a few ice cubes to froth it up, but don’t over mix.  Serve immediately.
