It’s guacamole!  This is a rather fattening and delicious dip, but without saturated fat.  It’s high in good vitamins and minerals, too.  Guacamole is a favorite at our house, and I hope it will be at yours, too.  Here’s my recipe.  Be careful – it’s easy to eat too much of it as it is so delicious!

Dr. Norris J. Chumley’s Guacamole
Makes 4 servings.

2 ripe avocados
1 small onion
1 clove garlic
1 lime
2 small tomatoes
½ jalapeno pepper (optional)
dash of salt and pepper

It’s easy: mash the avocados, or chop them into bite-sized pieces.  Large chop the tomatoes.  Finely dice the onion, jalapeno, and garlic.  Lightly mix together and add the juice from the lime, with a dash of salt and pepper.

Serve immediately with baked, low-fat chips or crackers.
