Here’s a simple, low-fat, delicious fish recipe that I love. A summer delight! It uses an easy sauce, which you make first. Get creative – this one is easily varied for your tastes.
Sauce:
Dice and place in a medium bowl:
½ small cucumber, finely diced
½ small green pepper, finely diced
½ small red pepper, finely diced
1 cup melon: honeydew, Catawba, or cantaloupe, finely diced (whatever you like, singly or a combo)
½ cup strawberries (or your favorite fruit)
3 teaspoons lemon or lime juice
Combine in a saucepan, and simmer slowly until mostly reduced:
¼ cup cider vinegar
¼ cup red or white wine vinegar
¼ cup cooking wine
¼ white or yellow onion
1/8 cup freshly grated ginger
Combine the fruits and the reduction in the pan, and cook an additional minute to introduce the flavors to each other.
Cook your favorite white fish (cod, flounder, perch, trout, etc. – anything not endangered). I recommend lightly sautéing in olive or canola oil. Or baking or broiling the fish is a great way to go.
Place fish on a beautiful plate, and spoon over the sauce. Or, you can put the fish on a bed of the sauce.
Try this. It’s easy, elegant, and ever-so-delicious. Serve it to guests, too.
