Yes, it’s true.  There is pasta that has almost no carbohydrates whatsoever.  Which means almost no sugar and very low calories.  It’s actually a vegetable!  Give up?

Think SPAGHETTI SQUASH.  Botanically known as Cucurbita pepo, it’s also called noodle squash, vegetable spaghetti, gold string melon in Japan, and fish fin melon in China.  It’s a winter squash, easy to grow, and may be boiled, cooked in the oven or microwave.  One cup has only 42 calories, is very filling, only 10g carbs, and 3.9g sugar.  It has many good minerals, and negligible fat.

It’s a winner.  Good for the diet, and very tasty.  Have it with some sugar-free spaghetti sauce, or a little olive oil and fresh garlic.

Here’s what I do:

— pre-cook it for one-minute in a microwave oven.
— remove from the microwave and carefully slice it in half.
— core out the pulp and seeds (which may be roasted, like pumpkin seeds)
— place in a glass baking dish with ¼- ½ inch water on the bottom
— microwave for 12 minutes
— using a fork, comb the strands of spaghetti squash out of the hard skin

Try it.  I think you’ll love it, and so will your body and figure.
