One of the many new, New Year’s resolution diet books caught my attention. It’s called “Why We Get Fat: And What to Do About It,” written by a science journalist, Gary Taubes.

His hypothesis is that it is actually insulin, or too much of it, that is making us fat. It’s not about eating less. It’s not about overeating, Taubes claims. It’s about energy, and how it’s used in our bodies.

If we eat a lot of carbohydrates, that causes a lot of insulin production to deal with the increased blood sugar in our system. Insulin eats glucose, or sugar, in the blood to put it simply.

If we eat far less carbohydrates (glucose), then our insulin will resort to stored body fat for energy. Simple!

Problem is, the vicious cycle of being fat causes us to crave even more carbohydrates and sugar, raising insulin levels and keeping body fat in place. It snowballs-more fat, more carbs, more fat.

Seems I’ve been saying this for a long time, and writing a lot about carbohydrates, right? Nice to have it scientifically backed up, though.
