This is a really tasty recipe that’s better, and healthier for you –
but it doesn’t taste like “heath food.”  No way!  Try it, you’ll like
it.
Dr. Norris Chumley’s Better Berry Muffins
Spray or coat two muffin tins with cooking oil. Pre-heat oven to 375.
Mix together:
1 cup whole-wheat all-purpose flour (I like King Arthur’s variety – it’s
the whole grain, but it’s not heavy like regular whole wheat flour)
1 cup regular whole-wheat flour
pinch of salt
pinch of baking soda
2 ½ tsp baking powder
In another bowl mix the wet ingredients:
2 eggs
½ cup honey
¼ cup vegetable oil
1 cup applesauce (unsweetened) or fruit puree (strawberry, raspberry, blackberry)
1 tsp. vanilla
2 tsps. Lemon or orange zest (you get this by grating a lemon or orange peel)
½ cup fat-free or low-fat buttermilk
¼ cup fat-free milk
Now gently combine the two mixtures together, then add:
1 cup berries (blueberries, cut strawberries, raspberries, cranberries –
in whatever proportions you like)  save an additional ½ cup.
Add the mixture to the baking tins.  Top with the extra berries.  Place in
the hot oven, on a middle rack.  Bake 30 minutes, or until a fork
inserted in a muffin comes out perfectly clean.
Cool until just slightly still warm and serve.
