I tried “Nikki’s Healthy Cookies” recipe from 101Cookbooks (a fab site) a few months ago and have since made multiple batches.
They really are healthy–and surprisingly delicious, despite being “butter-less, flour-less, egg-less,” and free of refined sugar. They’re moist, banana-y, and full of oats and coconut–and chocolate, of course.
Though the ingredients are a little bit spendy, this makes a lot of cookies and they’re not just dessert, but could work as a post-gym snack as well.
