In this week’s Cooking with Christian Music feature, we have another great recipe from MIKESCHAIR guitarist Sam Tinnesz: One Pot Chili.
MIKESCHAIR recently released their self-titled debut CD, a blend of pop rock and catchy choruses. Even more important than good music, the band encourages their fans to get involved in Mike’s Table by asking them to support local charities and ministries, being the hands of Jesus to feed the hungry.
And on that note, here’s this week’s recipe:
Sam Tinnesz’s One Pot Chili
1 lb. ground beef or ground turkey
1 large onion
1 Tbsp. chopped garlic
1 tbsp olive oil
Brown meat and onion in oil until browned and cooked through.
ADD:
1 can black beans
1 can dark red kidney beans
1 can chopped green chilies
1 large can crushed tomatoes
2 small cans of V-8* Spicy or Mild.
STIR TOGETHER AND THEN ADD:
1 Tbsp. molasses
2 tsp. of salt
1 Tbsp. chipotle pepper
2 Tbsp. chili powder
1 Tbsp. ground cumin
1 tsp. crushed red pepper
(adjust seasonings to taste)
Simmer for at least ½ hour to allow flavors to blend.
Serve with:
tortilla chips
grated cheese
sour cream
LEFTOVER TIP: Great over shredded lettuce the next day as a taco salad.
