We are visiting my 93 year-young mother on Mother’s Day. While she lives along, drives and is A-okay in every way, she no longer cooks! (Not that she was much of a cook to being with … oops, don’t tell her that I said that.) Anyway, I was agonizing over lunch. What to cook up and bring with us? I was reading recipes on the Internet for hours and hours and then it dawned on me – the biggest ‘duh’ moment ever. “For goodness sake,” I said to myself, “You’ve written two fantastic books that are chock-a-block full of recipes.”Here follow some of my personal favorite recipes from Our Lady of Weight Loss: Miraculous and Motivational Musings from the Patron Saint of Permanent Fat Removal as well as All Is Forgiven, Move On: Our Lady of Weight Loss’s 101 Fat Burning Steps on Your Journey to Sveltesville. These recipes are beyond good; they are GREAT … and they are basically one-bowl, easy to whip up recipes with easy to find ingredients. They are “to die for,” as we like to say in New York City!Simple Salmon SaladIngredients:1 lb. Salmon fillet, poached and cooled to room temperature2 celery stalks; finely chopped.1/2 red onion, peeled, finely sliced2 tablespoons capers (strain out the pickling juice) (I love salty capers; you might want to put 1 tablespoon in and see how it tastes before adding the 2nd spoonful.)juice from 1 freshly squeezed lemon2 tablespoons, fresh dill, choppedsalt n’ pepper to taste!Directions:Combine all ingredients in bowl and serve, on a nice 7 grain or whole wheat bread (read the label; no high fructose corn syrup please!) Alternatively, on an artfully arranged bed of lettuce.
Waldorf a la Our LadyIngredients: 4 apples, unpeeled, cored and chopped into bite-size pieces Juice from 1 fresh lemon1/3 cup raisins (plumped*)2/3 cup chopped celery1/4 walnut halves1/4 cup reduced fat mayonnaise (15 to 25 calories per tablespoon; no need for full-fat!)1 Tablespoon RAW Sugar (let’s let go of the refined stuff)Directions:Mix everything together in a medium-size bowl. Let it chill overnight. Something yummy and crunchy to look forward to!!!*Plump Your Raisins (not thyself)Place raisins in bowl and add enough warm tap water to cover them. Let them sit for a few minutes, absorbing the water, as they happily and peacefully plump up. After they are sufficiently plump, carefully and with love squeeze out excess water!
The Devil’s EggsIngredients:1 dozen hard-boiled eggs, preferably free range and organic1/3 cup reduced-fat mayo1 sweet pickle, diced (or 1 to 2 tablespoons sweet relish!)2 heaping Tablespoons of Dijon mustardjuice from 1 fresh lemonhot sauce, 2 major shakes – 3 if you like it spicy! (Jsalt n’ pepper to tasteDirections: Take hard-boiled eggs and cut the long way. Remove yokes from eggs and put in medium sized bowl. Add reduced-fat mayo. Mix in the rest of the ingredients until smooth and yummy.Then take a teaspoon of egg mixture and neatly place in the whites. (Do your best NOT to lick your fingers!)If you like, sprinkle a little bit of paprika on top! The red looks so nice against the yellow. Very artistic!
Blueberry SaucePour this sauce on your toast or fruit! Mix it with yogurt, or just plain eat it by the spoonful. It is truly divine!Ingredients:1/4 cup water1/4 cup raw sugarjuice from 1 freshly squeezed lemon1 pint fresh blueberriesDirections:Heat water with sugar until dissolved.Add lemon juice.Then the blueberries.
