Today, June 17th, is yet another ‘bizarre’ yet wonderful holiday! “Eat Your Vegetables Day” falls smack dab in the middle of National Fresh Fruit and Vegetables Month! A timely reminder and opportunity to add healthy portions of fruits and veggies to your healthy living plan!
Please feel free to not only include veggies with your meals, but snack on them all day and into the night! And while you are munching on, chowing down on carrot sticks, mushroom caps and jicama (very exotic) veggie, you can feel the vitamins and minerals rushing through your body, giving you a healthy kick in the tush!
Here is one of my favorite salad recipes. It’s not only overflowing with veggies, but fruits, too! OMG!!!! LOVE IT!!!!
Arugula and Strawberry Salad
Ingredients:
1/3 cup chopped walnuts
4 cups baby arugula, or torn arugula leaves
2 cups sliced strawberries (or more if you like, nobody ever got fat on strawberries)
1 ounce Blue Cheese, crumbled into small pieces
2 tablespoons FIG balsamic vinegar (my favorite of all balsamic vinegars)
1 tablespoon extra-virgin olive oil
salt and pepper to taste
Instructions:
Toast walnuts in a small dry skillet over medium-low heat, stirring frequently, until lightly browned and aromatic.
Take in a deep breath and enjoy the aroma.
Transfer to a salad bowl. Let it cool for a few minutes and then add arugula, strawberries, cheese, salt n’ pepper. Sprinkle vinegar and oil over the salad and toss gently.
TIP: Sometimes, I heat the balsamic fig vinegar until it gets thick, like syrup! Wowzer!
