If it’s Friday, it’s time for sexy vegetables!!!
One of my favorite Our Lady of Weight Loss quotes is “Vegetables are sexy and you can be too.” It’s the truth, because vegetables are overflowing with nutrients, they make your skin glow, your hair shine and so much more!
Think sexy. Think vegetables. Think svelte!
Spinach w. Pine Nuts
Ingredients:
1 tablespoon olive oil
one big bag of spinach
organic vegetable broth
3 cloves of garlic, chopped
2 tablespoons lemon, freshly squeezed
1/2 teaspoon lemon zest
3 tablespoons pine nuts
Instructions:
heat oil in big pan
saute garlic until brown and soft
add spinach
add splashes of organic vegetable broth as you cook (the broth keeps things from burning and adds flavor)
after it gets all wilted, stir in pine nuts and lemon zest
EAT!
