I have spent the past 2.5 hours (no kidding – 2.5 hours!) leafing through my recipes, looking for the right delish dish to whip up for Sunday night’s Oscar extravaganza. The criteria: something festive, colorful and comforting, just in case my picks don’t win – and – healthy!
So, without further ado …
Sweet and Sour Oscar Pasta
Ingredients:
1 red pepper
1 yellow pepper
1 orange pepper (NO! Green peppers)
2 cloves garlic
2 tablespoons capers
3 tablespoons raisins
1 teaspoon wholegrain mustard
juice of one fresh lime
1 tablespoon honey
2 tablespoons coriander, freshly chopped
8 ozs. pasta bows
salt n’ pepper to taste
1/4 cup Parmesan cheese
Instructions:
Quarter the peppers, removing its innards (the seeds and stalks)
Toss the peppers in boiling water for 10 minutes, until tender.
Drain and rinse under cold water, then peel off the skin and cut the peppers into strips.
Set aside.
In a small bowl, toss the garlic, capers, raisins, lime juice, and honey with coriander and a dash of salt and pepper.
Cook the pasta in large pot of boiling water, until al dente. Follow directions on package.
Drain. Place pasta in pan, add pepper strips and raisin mix. Transfer to serving bowl and sprinkle Parmesan cheese on top.
