Happy Meatless Monday to you!!!   Did you know that you can improve your personal health and the health of the planet by eating less meat?  Meatless Monday, a non-profit initiative of The Monday Campaigns in association with the Johns Hopkins’ Bloomberg School of Public Healthy, tells us, “By cutting out meat once a week, we can improve our health, reduce our carbon footprint and lead the world in the race to reduce climate change.”

When Our Lady of Weight Loss and I got together on Sunday (as we do every Sunday!) to plan our week, meals included, we realized that we tend toward meatless meals almost every day.  With regard to weight loss, you most definitely get a lot more bang for your calorie buck (or ‘point’ buck) when you travel The Meatless Route.

Today’s featured Righteous Recipe is EDAMAME HUMMUS, which can be smeared on top of a veggie burger or used as a dip for carrots, et al.    It’s incredibly delicious and overflowing with healthy fats!  Yes, healthy fats!!!

EDAMAME HUMMUS

Ingredients:
1 clove of garlic
1 tablespoon + 1 teaspoon of Tahini
2 tablespoons Extra Virgin Olive Oil
2 tablespoons Lemon Juice
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1/4 teaspoon salt, freshly ground
1/4 teaspoon black pepper, freshly ground
1.5 cups cooked frozen edamame

Instructions:
Whirl, whip, blend in your food processor (or trustworthy blender) until almost smooth.  Little pieces of edamame are always nice to bite into!!!

Smear on veggie burger, with a few slices of tomato and cucumber!  Wowzer!  Your veggie burger will no longer be a second class burger!!!
