I don’t want to be the first to use the word ‘holiday,’ but OMG! we are slowly but surely entering the holiday season and this year, I have promised myself that I will stay ahead of the curve!

Getting my recipes in order is a priority!  Therefore, today, this DysFUNctional Chef (bringing FUN back into dysFuNctional) is sharing with you a kick-tush sweet potato side dish!  It’s the ultimate sweet, comfort food; and it only takes about 20 minutes to peel and shop; an additional 30 minutes or so to cook!

Ginger Mash Sweets

Ingredients:
1 pound apples, peeled and cut into bite sized chunks (I like to mix apples; some sweet some tart!)
2 pounds sweet potatoes, peeled and cut into bite sized chunks (or yams; whatever is available in your market is just fine!)
1/4 cup water
dash of salt
2 tablespoons agave (I prefer light agave to dark agave, however, they are the same calorie count)
1/2 teaspoon all spice
1 teaspoon ginger, freshly grated

Directions:
Place 4-quart pot over low heat; spray it with cooking spray.
Then add the apples, sweet potatoes, water and salt.  Cover the pot and let the apples and potatoes kind of sweat it out for about 20 minutes.  Stir often enough without being obsessive 🙂
Just don’t let them burn (duh!!!)
If you need to add a bit more water.
When the potatoes and apples are soft enough to mash, go for it.
Mash away; adding the agave, ginger, all spice as you mash.
Serve warm!!!
