As promised in my last Monday’s post, which mentioned the unmentionable, here follows the best beef hash recipe ever, courtesy of Sunflower Farmer’s Market monthly magazine, which is always chock-a-block with healthy and delicious meals!
The Rosemary Hash weighs in at under 200 calories per serving! Unless, of course, you want to add a hamburger bun to the mix, a bit more ketchup and call it a Sloppy Joe! Then it’s closer to 350 calories. Still, for delish comfort food, that ain’t bad!
Ingredients:
1 large russet potato
6 tablespoons ketchup, low sodium
1 tablespoon Worcestershire sauce, low sodium
2 teaspoons canola oil
1 large onion, finely diced
6 button mushrooms, cleaned and finely diced
1 pound grass-fed ground beef
1.5 teaspoons dried rosemary, slightly crushed
Instructions:
Bring a small pot of water to boil. Submerge the potato, reduce heat and simmer for 15 to 20 minutes, until tender. Drain. When cool, peel and roughly grate to yield 1.5 cups grated potatoes.
In a small bowl, combine ketchup and Worcestershire.
Heat a large skillet; add oil, and then saute onion and mushrooms until soft and mostly dry, about 10 minutes. Add beef and brown well. Add grated potato and rosemary; brown on medium-high for 8 minutes.
Stir in sauce and serve.
