Passover starts on April 6 and it goes all the way through 14, and Our Lady of Weight Loss admittedly is a Matzo Brie freak!  She started heating up the skillet this past Sunday.

Seriously!  She will whip up a batch for anyone visiting, at any time.  She makes the cold water and hot water varieties.  If you look at the ingredients of Matzo Brie (see below), it is evident that it is a ‘clean’ food, easy to make and essentially low in calorie, thus Our Lady of Weight Loss approved!!!

Having said that, Our Lady of Weight Loss knows that most people eat way more than one serving!  Case in point, just this morning one of my star clients (you are all stars) confessed that she’d whipped up a batch of Matzo Brie and eaten it all!!!  A quick calculation showed that her breakfast weighed-in at 888 calories.

What is a serving size of Matzo Brie???  Our Lady of Weight Loss’s Matzo Brie recipe (see below) is 4 servings; not one.  Each serving is approximately 250 calories.

Cold Water or Hot Water?  There are two matzo brie camps; those who fervently believe that soaking the matzo in cold water before frying is the only way to go, and those who follow the hot water recipes. Either way, matzo brie (much like french toast) is delicious!

Here follow Our Lady of Weight Loss’s two favorite matzo brie recipes. I asked her, “cold water or hot water, which is your fav?” But, she refused to take sides. She instructed me to fry up both and make up my own mind!

COLD WATER MATZO BRIE

Ingredients
4 matzo crackers
4 large eggs
salt to taste
2 tbsp butter

Directions
Soak matzos in cold water for 2 minutes. Drain and crumble. (some people prefer big chunks to small chunks; your choice!)
Beat eggs and salt together in bowl. Add matzo; mix till well-coated. Heat butter in skillet and pour in matzo mix. Fry till browned on both sides. Serve warm!

HOT WATER MATZO BRIE

Ingredients
4 matzos
Boiling water
4 eggs
salt n’ pepper to taste
a dash of honey
2 tablespoons butter

Instructions
Break the matzo into nice sized chunks (at least 2 inch pieces) and place in a colander. Pour the boiling water over them. Drain, lest your matzo is soggy and no one wants soggy matzo!
Beat the eggs well, adding salt and pepper; then add the matzo.
Heat a large frying pan and add fat for frying. Add the egg mixture and cook over low heat till golden brown on one side, then turn carefully and brown on the other side. Serve on a hot platter as a large family-size pancake. Serve hot with sugar that has been mixed with a dash of cinnamon, or with honey.
