This afternoon, just as I was thinking, “I sure am in the mood for something sweet,” lo n’ behold, right there on the kitchen counter sat three ripe bananas, begging to be mashed! “Mash me,” they sang.
“Okay, I will,” I replied, as I quickly reviewed my rolodex of recipes and found my tried and true, always delish Banana Rice Pudding.
Try it! You’ll love it. Yum!
Banana Rice Pudding
Ingredients:
3 c milk, 1 % fat
1 c short grain rice
3 bananas, ripe and mashed
1/2 tsp nutmeg
1 tsp vanilla extract
5 cardamom pods, whole
1 cinnamon stick
Instructions:
In medium sauce pan combine all ingredients
Bring mixture to a boil and immediately reduce heat to a simmer
Stir constantly and cook until rice is tender and mixture is creamy, approximately 30 minutes.
Add some water if more liquid is required.
Before serving remove cardamom pods and cinnamon stick.
Spread the word … not the icing!
