I woke up with a Jones for Peanut Butter and Bananas! Imagine that!!!
My gut reaction to my Jones was to think,” steer away from PB and Bananas; way too many calories.” But, at closer examination, I realized that – when prepared and ingested in moderation – the mighty duo was more than okay. In fact, PB&B is an Our Lady of Weight Loss approved combo!
Here, from the OLofWL Kitchens, are 3 of Our Lady of Weight Loss’s BEST PB and BANANA Recipes to be savored as a snack, for breakfast, for lunch … heck, why not for dinner, too?! Enjoy!!!
Banana Roll-Up – Snack, Sandwich, Breakfast or Lunch !!!
Ingredients:
1 banana, peeled
1 small, 6 oz. corn tortilla
1 tablespoon natural peanut butter (if possible, grind your own!)
1 teaspoon honey
Directions:
Spread peanut butter and honey on tortilla.
Roll banana in tortilla and slice in half.

Hot off The Griddle Banana, Peanut Butter Sandwich
Ingredients:
non-stick cooking spray
2 tablespoons peanut butter
2 slices light bread
1 banana, sliced
Directions:
Heat a skillet or griddle over medium heat. Coat with non-stick spray.
Spread 1 tablespoon of peanut butter onto each slice of bread.
Place banana slices onto the peanut buttered side of one slice.
Top with the other slice and press together firmly.
“Fry” the sandwich until golden brown on each side. (2 minutes or so each side!)

Banana Banana Bread – Open Face Sandwich
Ingredients:
1 banana
1/3 cup low fat ricotta cheese
1 Tbsp honey
1 slice banana bread
Directions:
In a small bowl, stir ricotta cheese with honey.
Spread mixture on top of slice of banana bread.
Place sliced bananas on top.
Spread the word … not the icing!
