dysfunctional chef copySloppy Joe’s are an American creation that has been around since at least the 1950s. Popular with most children, a favorite in lunch rooms in schools from sea to shining sea, Sloppy Joe’s are also a favorite of parents, as Sloppy Joe’s are easy and inexpensive to make!
Served on a bun or as an open sandwich, with a side of salad, and you are set for a fabulous, fun and comforting meal!  Enjoy!!!
Our Lady of Weight Loss Approved:  SLOPPY JOE
Ingredients:

1 lb. lean ground beef (antibiotic free)
1/4 cup chopped Vidalia onion
4 cloves garlic
1/4 cup chopped green bell pepper
1/4 cup chopped red pepper
1 teaspoon prepared yellow mustard
1/2 cup ketchup
1 small can peeled tomatoes, drained
1 tablespoon brown sugar
salt and pepper to taste
organic beef brother (as needed)

Note: Ground turkey or textured vegetable protein are acceptable substitutions for ground beef!

Directions:
In a medium skillet over medium heat, brown the onions, garlic, red/green peppers and ground beef.  Drain liquid.  If you need to add liquid to your pan, then try a little organic beef broth.  Very tasty!

Stir in the mustard, ketchup, peeled tomatoes and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper, to taste!

Serves 8
