dysfunctional chef copyOur Lady of Weight Loss and I had a grueling morning.  We went shopping!   We picked up a heavy shelving unit that need to be assembled, dragged it to the car, loaded it up, drove it downtown to my art studio, and then assembled it.   Manual labor, calories burned; quite the morning!

By the time we got back home, we were starving.  Well, maybe starving is a bit of an exaggeration, but we sure were hungry.  Hungry enough to tip the entire contents of the fridge down the trap (our mouths), but we were saved.   Our Lady, the Patron Saint of Permanent Fat Removal, had whipped up a bowl of already Simple Salmon Salad before we left!  Goodness gracious, she is something else!!!  Thinking ahead like that!

Here, from the Our Lady of Weight Loss kitchens…
Simple Salmon Salad

Serves 4
approx 220 calories per serving

Ingredients:

1 lb. salmon filet, poached and cooled to room temperature
2 celery stalks, finely chopped1/2 red onion, peeled, finely sliced
2 Tablespoons of capters (straing out the pickling juice)
juice of 1 lemon
1/4 cup reduced fat mayo
2 Tablespoons fresh dill, chopped
salt and pepper to taste

Instructions:

Combine all ingredients in a medium size bowl.  Mix, toss, blend with love.
Serve on bed of lettuce.
