I attempted to make my own salsa because, I eat ALOT of salsa. I didn’t follow a recipe or measure. The ending result was tomato gazpacho, which coincidentally I have always wanted to make, but never knew how! Here is my version of a recipe, use it for inspiration.
4 cans of chopped tomatoes with juice ( or 4 cups of fresh chopped tomatoes )
2 tablespoons of lime juice
2 tablespoons of lemon juice
1 can of corn
1 can of peas
3 table spoons of red pepper
3 table spoons of black pepper
1/2 teaspoon of sea salt.
1/2 cup of fresh basil (chopped )
Mix it all together, refrigerate. Serve over warm corn chips, tortillas, or romaine lettuce with olive oil and black beans.
