INGREDIENTS for Crust:
1-1/2 cups all-purpose flour
1/4 teaspoon salt
6 Tablespoons butter
2 ounces grated cheddar cheese
1/2 cup half and half cream
INGREDIENTS for Filling:
5 eggs, beaten
1-1/2 cups milk or half and half cream
8 ounces cheddar cheese, grated
1/8 teaspoon pepper
1/4 teaspoon salt
2 to 3 drops Tabasco sauce
1 Tablespoon chopped parsley
3/4 cup diced ham or cooked bacon
1/3 cup chopped green bell pepper
1/3 cup chopped onion
TO PREPARE:
Preheat oven to 350 degrees. Combine flour and salt in medium bowl. Cut in butter; add cheese. Add cream and, using a fork, toss mixture until it barely holds together. If mixture seems too wet, add another Tablespoon flour. Do not overmix (ingredients must be mixed by hand). Form into a ball and roll out on lightly floured board. Place dough in a nine-inch deep-dish pie plate. Fold edges under to form a standing, thickened rim. Flute edges. Combine all filling ingredients, mixing well. Pour into pastry shell. Bake 50 to 60 minutes, or until a knife inserted into the center comes out clean. Let sit ten minutes out of oven and serve.
