INGREDIENTS for Chipotle Sauce:
1 cup canned solid-pack pumpkin
1 (8-ounce) jar salsa
1/4 teaspoon nutmeg
1 chipotle chile (optional)
1/4 teaspoon nutmeg
TO PREPARE:
For the sauce, combine the pumpkin, salsa, cheese, chipotle chile and nutmeg in a saucepan and mix well. Cook over medium heat for 10 minutes or until the mixture is almost to the boiling point, stirring occasionally. Remove from the heat. Cover to keep warm.
For the pork chops, combine the brown sugar, cumin, chili powder, salt and pepper in a bowl and mix well. Sprinkle the brown sugar mixture over both sides of the pork chops. Heat the olive oil in a skillet over medium heat. Add the pork chops. Cook for 10 minutes or until cooked through, turning occasionally; drain. Toss the tomatoes and cilantro in a bowl.
To serve, spoon the sauce evenly onto 4 serving plates. Arrange 1 pork chop on each plate. Top with the tomato mixture.
