Packed with vitamins, carrots have an assortment of vitamins like B1, B2, B3, B6, and B8. They have beta-carotene which is great for your heart and cost 6 cents per serving. We know they are good to fight aging, help eyesight and can boost collagen. The vitamin A in carrots helps the body detoxify as well. Carrots can be utilized in stews, soups, as a cheap snack and used in salads. You can have baby carrots, roasted carrots or eat them grilled. Combine medallion sliced carrots with sweet potatoes, cabbage, kale, green peppers, onions and garlic. Drizzle olive oil, add salt, add pepper and wrap it in aluminum foil and bake for 30 minutes at 350 degrees until softened. Carrots are one of those vegetables that are really underrated.
