Gluten-Free Diet: Fad or Fact?
Advocates of a gluten-free diet argue that wheat today is different from wheat grown in the early part of the 20th century. They claim that the human body can't break down modern day wheat. Gluten-free evangelists will tell you that wheat is to blame for obesity, diabetes, and other food-related medical problems. While it's true that the Green Revolution of the 1950's introduced new strains of proteins and enzymes to our wheat crops, there's no proof that the general population benefits from eliminating gluten from their diet. However, there is evidence of gluten allergies that can affect the way a person feels. Cutting back or eliminating gluten can relieve allergic reactions like headaches, and even anxiety.
