Sweet potatoes are a low-glycemic food which means they don’t cause dangerous spikes in blood sugar levels. They are shaped like a pancreas which is the organ that produces insulin and releases it into the bloodstream to regulate glucose (sugar).
Sweet potatoes are rich in vitamin A, vitamin C, manganese, fiber, and B vitamins which makes them beneficial to eyesight, able to positively affect mood, fight against cancer, and strengthens bones.
